Chickpea Tacos
I absolutely love tacos, but I have been trying to incorporate more veggies into my diet. This past week I tried a new recipe for tacos, chickpea ones. I also made a homemade tzatziki sauce to go with it.
- Ingredients
- A can of garbanzo bean/chickpeas
- An avocado
- One or two roma tomatoes
- A green pepper
- A red onion
- An English cucumber
- 5.3 oz of unsweetened So Delicious coconut yogurt
- 1 tbsp of Cumin
- 1 tsp of Garlic powder
- 1 – 2 tbsp of balsamic vinegar
- 1 – 2 tbsp of soy sauce
- Tortillas (flour or corn)

- To make the chickpea tacos, drain and rinse the can of chickpeas. Once done, add them to a skillet with the balsamic vinegar and soy sauce at a low to medium heat for about 5 minutes and stirring frequently.
- At this point, you can chop up the green pepper, onion, tomatoes, and avocados. Place the onions and green pepper in a skillet with a little bit of olive oil and saute them for a few minutes.
- Once the chickpeas are done roasting and the veggies are done sauteing, go ahead and assemble the taco and enjoy.
- Recipe – Vegan Tzatziki Sauce
- Cut the ends of the cucumber and grate half the cucumber into a strainer or towel. Squeeze or mash the cucumber so the excess water has been removed.
- Take the grated cucumber and combine it with the coconut yogurt in a bowl. Once combined, season with the cumin and garlic powder to taste. Use it as the sauce for the chickpea tacos or add it to a gyro.
