Taco Bowls for Meal Prep
Tacos are my favorite food in the world, and I would eat them every day if I could. During the month March, I did a meal prep challenge. For the first week, I had made veggie taco bowls so I could have my favorite, but with less bread. Here are the items I used to make this bowl.
Ingredients:
- MultiColored Peppers
- A 15 oz can of black beans
- Microwaveable rice or rice and quinoa blend
Recipe:
- Cut the multicolored peppers in any way that you would like. Sautee them for about 10 minutes or until soft with salt, pepper and some minced garlic.
- While the peppers are cooking, drain the beans and heat them up in a pot on with a little bit of garlic and onion powder.
- In the meantime, put that microwave rice in the microwave for 90 seconds.
- Place all these in equal portions in your meal plan containers. Add any additional items that you would like, such as fresh tomatoes and avocado or cheese the day you are planning to eat it.
