Tri-color Summer Chicken Pasta Salad
It never hurts to have a good pasta salad recipe for a quick lunch or dinner for you and/or your family. It is always a good backup since I can grab a bunch of items, throw them together and I can enjoy this either warm or cold. The easiest one I make is this chicken pasta salad where the only that needs to be cooked is the pasta.
Ingredients
One box of rotini pasta
A rotisserie chicken
A package of cherry tomatoes
One red onion
One Cucumber
Fresh parsley and basil
Italian Dressing
Directions
Take the box of pasta and cook it according to the instructions on the box. Once you have drained the pasta, rinse them for a few seconds with cold water to keep them from cooking. Place the pasta in a nice big salad bowl
While the pasta is cooking, cut the cherry tomatoes, half a cucumber into quarter slices, one-fourth of the red onion diced and any other veggies you would like to add. Also, cut at least half of the rotisserie chicken into pieces.
Once you have placed the pasta in the salad bowl, add your chicken and veggies to the bowl. Also add the chopped parsley and basil as well as some salt and pepper to taste. I like to add a bit of garlic powder into there as well.
For the pasta not to dry out, stir in about a tablespoon of olive oil and the pasta will last you for about 4 days covered. Once you are ready to serve, drizzle it with at least 1/2 of a tablespoon of Italian dressing or any dressing of your choice and enjoy.
