Vegetarian Flautas
Some of the recipes I love come from the Thug Kitchen Cookbook. These vegetarian flautas are beyond amazing and are a great dinner recipe or an after-school snack.

Ingredients:
- A can of black or pinto beans
- A pack of tortillas ( I use flour as they are easier to work with)
- A can of whole corn sweet kernels
- A small white or yellow onion
- A can of green chilies
- A tablespoon of minced garlic
- Seasonings: Cumin, chili powder , and salt (I add a bit of pepper in there as well)
- Optional: Poblano Pepper
Cooking Instructions:
- Make sure to put your oven at 400 degrees Fahrenheit and lightly coat a baking sheet with cooking spray.
- Now to cook the onions. Chop the onion until you have a cup and saute them in some olive oil for about 5 minutes. Add the spices and garlic into the pan and cook for another 30 seconds.
- Throw the beans, chilies and lime juice (optional, I don’t always do this as it can get pretty lime-y) into a big bowl. Mash that up together with a potato masher or big spoon. It doesn’t have to be perfect. I always mash it up to about 75% looks like a paste. Once that happens, fold in the corn and the sauteed onions into the paste.
- Now, it is time to warm the tortillas up. I just use a microwave and warm them on a plate for about 10-15 seconds.
- Take a tortilla, put in about two tablespoons and make it into a straight line towards one of the long edges of the tortilla. Start rolling that tortilla up nice and tight and put it down seam side on the baking sheet. Repeat this until you fill up all your tortillas.
- Lightly coat them on the top with some avocado oil spray and put them in the oven for 10 minutes. Pull them out, flip them over and continue to cook for 5-7 minutes. Top them with salsa, lettuce, avocado or sour cream.
