Cauliflower Fried Rice

Cauliflower rice is the best way for me to figure out how to cut down my carb intake in the week. I always try to make it into fried rice, so it is as boring.

The way I make cauliflower fried rice is so lazy. I always get the frozen cauliflower rice, frozen edamame, and frozen peas and carrots so I can count down on chopping veggies up.

In order to make the fried rice, I always heat up the frozen veggies first in a hot skillet with at least 1 tbsp of olive oil. Once they have been heated up for about 5-8 minutes, I add the frozen cauliflower rice, onion powder, garlic powder, and some pepper seasoning. You don’t need a lot of seasoning as you will get a lot from the soy sauce. After about 5-8 minutes, I would add 1 tbsp of soy sauce. After about 5 – 10 more minutes of cooking, your rice should be done. Add as much soy sauce as you want, but I will caution you cauliflower will soak it right up.
