Lemon Blueberry Breakfast Loaf


Ingredients

1/3 cup butter, melted

1 cup white sugar

3 tbsp lemon juice

2 large eggs

1 1/2 cup flour

1 tsp baking soda

1/2 cup milk ( i used oatmilk)

1 cup blueberries (fresh is preferred)

2 tbsp lemon zest

Directions

Place your oven at 350 degrees Fahrenheit. While the oven is warming up, combine the lemon juice, sugar, eggs, and melted butter in a large bowl. Once combined, take the flour and baking soda and combine these two ingredients in a separate smaller bowl. Take the dry mixture and add it little by little in the large bowl mixing until everything is mixed well. Fold in the blueberries and lemon zest. Place the mixture in a meatloaf pan ( 9′ x 13′) and bake in the oven for 45 to 60 minutes.
