Sweet Chili Thai Chickent Meatballs
These chicken meatballs are not only a great alternative to beef, but delicious that even kids would love them. It is a great dinner/lunch recipe or just an appetizer for house parties.
Ingredients
1 lb of ground chicken
2 tsp of minced garlic
1 tbsp of minced ginger
1 egg
2 green onions, finely chopped
1 tbsp of grated lemon grass
1/2 cup of breadcrumbs
sweet chili sauce
Directions
Preheat your oven to 350 degrees Fahrenheit and spray an 8 by 8 inch pan.
In a large bowl, combine the lemongrass, green onions, egg, breadcrumbs, ground chicken, garlic, and ginger. Also add salt, pepper, and additional seasonings to taste. Use a large spoon to mix all the ingredients together.
Shape the mixture into at least 2 tablespoon sized meatballs and place them in the non-stick sprayed pan. Place in the oven and bake for 20 minutes.
Pour 1/4 cup of sweet chili sauce over after baking or baste the meatballs half way through before placing back in the oven for the rest of the cooking time. Use additional sweet chili sauce of dipping.
