Taste of Fall Baked Cider Donuts
These donuts taste like the start of fall and just make your kitchen smell all warm and fuzzy. You can taste the hint of cardamom and cinnamon and enjoy these with a good cup of hot chocolate or coffee.
Apple Cider Donuts
Serving: 12 – 16 donuts
Ingredients
1 1/2 cups of apple cider
1 cinnamon stick
2 tbsps of unsalted butter, melted and cooled
2 cups of all-purpose flour
1 tsp of baking powder
1 tsp of baking soda
1 tsp of ground cinnamon
1/8 tsp of ground cardamon
1 egg
1/2 cup of light brown sugar
1/2 cup of granulated sugar
1/2 cup of oat milk
1/2 tsp of vanilla extract
Directions
Preheat the oven to 350 degrees Fahrenheit and spray the donut pan and set it off aside.
In a small saucepan, place in the apple cider and cinnamon stick. Bring to a soft simmer and simmer for at least 15 minutes. Remove from heat and let it cool. In the meantime, melt the unsalted butter and let it cool.
In a large bowl, combine the flour, cinnamon, cardamom, baking powder, and baking soda. Set this aside. In a medium bowl, place in the egg and whisk lightly. Then add the melted butter, brown sugar, granulated sugar, oat milk, and vanilla. Whisk until smooth, then add the cooled apple cider and whisk again.
Pour the ingredients of the medium bowl into the large bowl and whisk together. Combine the mixtures until it is smooth and it should look like dulce de leche or a bit darker.
Take the batter and pour it into a freezer large Ziploc bag. Close the bag with limited air in there. Cut a small corner and use it to fill the donut pan. Fill each area at least 2/3 full and wipe off the excess batter around the pan. Place in the oven and back for 10 minutes.
